Martín Códax Sparkling has undergone a selective harvest in early September, ten days before the start of the conventional harvest, to ensure its freshness and balance. Prior to production using the traditional method (champenoise), the base wine was aged on its lees for three months. The bottling was done in October 2017. The second fermentation in the bottle was carried out slowly, with temperature control, resulting in smaller bubbles that are perfectly integrated into the wine. It underwent aging for thirty months on its lees before disgorgement, providing complexity in aromas and further enhancing bubble integration. Alcohol: 12% vol.
