The 'xeito' is a traditional drift gillnet fishing method with a long tradition in the village of Rianxo (Ría de Arousa). Xoubiña is caught in the month of July when its culinary characteristics are at their optimal moment. We package it traditionally, one piece at a time, manually. The fish goes from the sea to the can in about 4 hours to preserve all its qualities and maximum freshness.
